All & About was invited to the opening of COYA at the W Doha on the 14th of March 2021. The award-winning contemporary Peruvian restaurant, invited guests for their first masterclass, as part of their opening. All & About got to experience the exotic cuisine of Peru in a true Peruvian setting, where gastronomy and Incan traditions seamlessly blend under one roof.
General manager of COYA Doha, Alessandro Zavarise along with assistant manager, Cindy Dios, welcomed the guests at the door and gave them a tour of the restaurant’s contemporary interior, which is rich in culture and aesthetics. The masterclass was held in the private lounge of COYA Doha which has an attractional vibe of its own.
The first class dealt with the preparation of beverages, with senior chefs Sebastian & Roberto. With years of experience in the field, and a passion to bring their menu to life, the chefs taught the guests to learn the creation of world renowned Peruvian beverages “Pisco Sour” & “Chicha Morada”. The Pisco used for the masterclass is COYA’s very own creation, which is developed using Peruvian traditional techniques and years of perfecting.
The guests were first given a demonstration and were then encouraged to create their own beverages to enjoy with the next part of the masterclass with Head Chef Hassan.
The guests were visually transported on a journey back to Peru while learning to prepare the renowned dish of all, “ The Ceviche” – an appetizer using raw fish which is cured with salt and traditional “tiger milk” (citrus based, spicy based marinade). COYA shared the recipe of one of its top sellers, to the guests and guided in creating their own “Ceviche”. The Chef shared recipes of three different ways to make the dish – Lubina Classica (Traditional Peruvian Ceviche), Salmon Nikkei (Chinese infused) and lastly the Tuna Chifa.
The friendly and vibrant atmosphere contributed to an exceptional experience to learn and enjoy at the same time.
